Gluten intolerance
In case of gluten intolerance or celiac disease, the body has an abnormal reaction to gluten. The problem is caused by gliadin, a component of the gluten protein, found in wheat, barley, rye and often in oats. It often manifests already during infancy with symptoms such as chronic diarrhea, weight loss, fatigue and bloating.
When a person suffering from this condition eats food that contains gluten there is an inflammation of the small intestine. As a result, the nutrients cannot be absorbed adequately and they progress in the digestive system. It means that too much liquid and semi-digested food reach the colon, where there is hardly any absorption taking place, therefore the stool remains liquid and the body lacks nutrients. Unfortunately, there is no cure for sensitivity and intolerance to gluten. The only way of treatment is if you don’t consume foods that contain gluten.
As a result of a strict gluten-free diet the gastrointestinal inflammations stop, and so does the nutrient deficiency. People suffering from gluten intolerance must know exactly which foods contain gluten.
Wheat, rye, bran, enriched flour, bulgur, barley and cakes, noodles, biscuits and other ready meals that contain these cereals must be avoided. You should not drink beer or any other cereal-based alcoholic beverages. Unfortunately, oat must be off your diet, too. You must pay attention to processed foods, such as canned food, salad dressings, ice cream, chocolate, instant coffee, ketchup, mustard, cold cuts, etc.
Untreated gluten sensitivity is often coupled with lactose intolerance, therefore you should pay attention also to your consumption of dairy products.
You may consume corn, sorghum, rice, wild rice, just like amaranth, quinoa and buckwheat. Potato, banana and manioc are also rich in carbohydrates and can be consumed freely.
If you are sensitive to gluten, it is recommended to take vitamins and mineral supplements to have a complete diet.
